Apple Melomel?

I have been homebrewing for years, but my only attempt at making a mead was

not quite a success.  It wasn't terrible, but it really didn't go over
well 
with my wife.  I think she might enjoy it a little more if I added some
type 
of fruit.  I recently purchased 12 lbs. of carrot blossom honey.  I also 
have a juicer and thought maybe apple would go really well with the honey.

I haven't seen any recipes for a melomel containing apples.  Anyone have
any 
suggestions?  I thought perhaps I would make a mead and then juice some 
apples and carrots together and add it to the secondary.  If anyone has
any 
suggestions, I would appreciate it.  Also, if you have any better ideas,
I'm 
wide open.
